Simple + Healthy Frozen Banana and Cashew Nut Butter Bites Recipe
FROZEN BANANA & CASHEW NUT BUTTER BITES

I love fresh bananas with cashew nut butter. It is indulgent, natural and a real pleasure without any guilt. Now add dark chocolate on top, a touch of salt and freeze it all. This homemade creation is a treat for the whole family, but make sure you get one as they tend to go fast.


INGREDIENTS

Serves 1

1 large banana

1 tbsp cashew nut butter

100g high quality dark chocolate

1 tsp odourless coconut oil

A large pinch of sea salt


METHOD

Slice the bananas into 0.5/1 cm slices. Sandwich them with cashew nut butter in the middle. Freeze bites for 15 minutes.

Melt the dark chocolate “au bain marie”: fill the bottom of a saucepan with couple of cms of water and bring to a simmer over a medium-high heat. Put the chocolate in a smaller saucepan or a glass bowl and set over the simmering water, stirring occasionally.

Remove bites from the freezer and pour dark chocolate on top.

Place back in the freezer for 2 hours.

Once removed from the freezer, eat them within 10 minutes as they defrost fast. Enjoy!
