Pip Lacey former head chef of Murano to open wood-fired concept fusing Japanese, British and Scandinavian influences

Scandinavian, Japanese and British ingredients and modish techniques like curing, smoking and pickling will feature on the menu of Hicce (pronounced ee-che), Pip Lacey, 2017 Great British Menu winner and ex Murano Head Chef's first solo restaurant.


Hicce means "current, of the moment" in Latin and fittingly wood-fired cooking for vegetables, meat and fish will be central to the restaurant. Lacey says "the plan is for the restaurant to keep evolving."


Her business partner will be front of house guru Gordy McIntyre.


They are currently searching for a Central London location, hopefully in Soho and plan to open Spring 2018 so more details shortly
