This French Michelin-starred wonder specialises in fare from south west France, where head chef Pascal Aussignac grew up

Club Gascon has been a favourite on the London restaurant scene since it opened two decades ago. Chef Pascal Aussignac specialises in fare from south west France, where he grew up, and his flair for this cuisine has retained him a Michelin star since 2002. The restaurant closed briefly last year for refurbishment, which included the relaunch of the more casual bar next door: Le Bar. The interior of the main restaurant is both upmarket and relaxed, the high ceilings and crisp white tablecloths are softened by squishy banquettes and splashes of yellows and blues.


Club Gascon's menu is divided into three parts: the first, titled 'Gascon', focuses on the dishes that Aussignac is renowned for, such as foie gras and veal. 'Season', unsurprisingly, caters to ingredients that are in season and feels very fresh – think scallops, beef fillet and pigeon. Finally, the 'Garden' list is vegetarian, featuring dishes like aromatic courgette flower and crackling slow cooked egg. The triptych as a whole represents the past, present and future of cooking, and we can't wait to see what Aussignac does next.
