Healthy Autumn Recipes: Plum Crumble

Did you know you don’t have to use flour to make a crumble? This season, pick apples or plums and top them up with a mixture of oats, nuts and seeds. You can vary the proportions depending on what you have in your shelves. This quick and easy crumble recipe will satisfy your sugar cravings.

HEALTHY PLUMB CRUMBLE
(Serves 2, generously)

Ingredients

For the fruit:
6 plums (400g), sliced in two
1 tsp of coconut sugar (optional)

For the crumble topping:
A handful of nuts (45g), roughly chopped (I used almonds, hazelnuts and walnuts)
1/2-cup gluten-free jumbo oats (50g)
1 tsp. pumpkin seeds
1 tsp. sunflower seeds
1 tbsp. maple syrup
1 tbsp. coconut oil, melted

Method

Preheat oven to 180C/350°F.

Cut the plums in halves and place them into an ovenproof dish or ramekins.

Use a food processor to pulse the nuts roughly (give a few short pulses) then add all the dry ingredients. Pour the maple syrup and melted coconut oil on top and mix well.

Sprinkle the fruits with the crumble mixture. Bake until the topping is golden brown and the fruit is soft, about 15-20 minutes. Enjoy!

TIP: My oven is strong so I usually cover the crumble with foil after 10 minutes so the crumble mixture doesn’t burn.
