The head bartender of the Savoy's Beaufort Bar is going it alone, opening a cocktail bar celebrating some lesser-known regional drinks from across France

The head bartender of the Savoy's Beaufort Bar is going it alone and opening his own bar in Bethnal Green.

Coupette will borrow from the extensive experience Chris Moore gained at The Beaufort, one of the West End's grandest and most prestigious hotel bars. Coupette is in good company in Bethnal Green, joining the likes of the Town Hall Hotel, and Tony Conigliaro's new cocktail bar, Untitled. The cocktail bar assumes the space that last housed the Albion pub.

Coupette will shine a distinctly French light on to London's cocktail culture, and focus its energy on celebrating drinks from the French regions that are little-known in London. Vermouth, Calvados and Champagne – familiar in name, but which Moore feels are in some ways misunderstood, even overlooked – will be exposed in new light.

The resultant cocktail list includes the simply named 'Apples', a sup featuring Calvados and a rotating cold-pressed apple juice that'll change with the seasons.

A White Negroni will feature seasonal truffles. Slowly, more and more bars in London are becoming interested in seasonality, following the footsteps of the newly-opened Scout by Matt Whiley.

Alongside the refined cocktail list that will constantly surprise, an exclusively French wine list will promote smaller vineyards. It's a similar story for the food, which has an entire section of the menu dedicated to croque monsieurs. Larger plates include confit duck leg with glazed salsify, and chicken liver parfait with crispy skin. If you'd rather share, charcuterie and cheese boards will be equally prominent on the menu.

What's perhaps most exciting is a bi-monthly series of events, called Calvados Club, which will feature French chefs, sommeliers, and Champagne houses. If you're still on the fence, how about the 'Full French' breakfast at weekends, featuring, among other things, smoked eel, truffle scrambled eggs, boudin noir, Lyonnaise onions and oven-baked eggs.
