A quick recipe for a healthy prawn noodle soup, from Tony Turnbull's new cookbook, 'The Only Recipes You'll Ever Need'

Prawn noodle soup recipe: a healthy meal
This prawn noodle soup recipe is light and simple, but packed full of delicious Asian flavours.  It can be completed in 10 minutes, so it is a perfect recipe for a quick and easy supper.


PRAWN NOODLE SOUP


INGREDIENTS:

800ml chicken stock 

2 small red chillies, halved

4 cm knob of ginger, grated

2 lemongrass stalks, bruised

4 tbsp fish sauce

4 tbsp lime juice

1 tbsp sugar 

100g mushrooms, sliced

150g rice noodles

250g cooked prawns

A handful of coriander, roughly chopped


METHOD:

1. Simmer the stock for 5 minutes with the chillies, ginger, lemongrass, fish sauce, lime juice and sugar. Strain and return the stock to the pan.

2. 
Add the mushrooms and noodles and cook for 5 minutes. Add the prawns and warm through for 1 minute. Serve with a sprinkling of the coriander.

Serve.
