Tarragon and Yoghurt Chicken Recipe, from cookbook 'The Only Recipes You'll Ever Need'

Light and healthy, this quick chicken recipe is satisfying and packed full of protein. With added salad, it would make a delicious, portable lunch.

Tony Turnbull's new cookbook reinvents familiar ingredients with minimal fuss, and maximum flavour. Try this delicious chicken with yoghurt and tarragon recipe at home.


TARRAGON AND YOGHURT CHICKEN BREASTS

INGREDIENTS:

4 skinless chicken breasts
4 tbsp natural yoghurt
A large handful of tarragon, finely chopped
2 tbsp Worcestershire sauce
Mixed salad leaves, to serve

METHOD:

Slice each chicken breast in half lengthways, creating two escalopes. Mix together the remaining ingredients with some seasoning. Cover all of the chicken and leave to marinate for at least 30 minutes.

Heat a grill or ridged pan and cook the chicken for about 3 minutes on each side, or until cooked all the way through. Season. Serve on a bed of salad.
