This November, Le Méridien in Piccadilly will offer diners a taste of sunnier climes, with British Caribbean cooking by guest chef Jason Howard. Taking place in the beautiful glass atrium of the hotel’s Terrance Grill and Bar, which overlooks Piccadilly, the dinner will comprise six courses, prepared by Howard, and Le Méridien’s resident Chef de Cuisine, Michael Dutnall.

Each course promises to combine the best of French cooking and technique with an infusion of Caribbean flavours. The supper will begin with two amuse-bouches, ‘Queen Victoria’s Brown Windsor’, a spiced beef consommé, followed by a smoked Scottish soup with salt fish.

After seared scallops and Scotch bonnet to start, the main course will be a Caribbean beef Wellington, made with spiced oxtail, plantain and duxelle, and accompanied by a callaloo puree, which is made from stewed green leaves. If you have room, there are also two mouthwatering desserts to enjoy: a dark rum cake, and a Caribbean trifle.

With his delicate approach to the bold flavours of his homeland, Howard’s mission to redefine Caribbean cooking has already seen him bring it its first Michelin star. His residency in Piccadilly offers the perfect antidote to gloomy November nights. Just be sure to book soon to avoid disappointment: his pop-up suppers usually sell out fast.
