The heralded restaurateur behind Chotto Matte and Fucina launches a panetteria

Panetteria by Fucina, Marylebone restaurant
Kurt Zdesar, the heralded restaurateur behind Chotto Matte and Black Roe, opened his Italian restaurant Fucina in 2016. Fresh for 2017, Fucina has had a baby.

Panetteria by Fucina, on the same site as Fucina, sells artisan foodstuffs foraged from Italy's vast regions by food buyer Andrea Orsini. Though the panetteria is ultimately a shop, there are three coffee blends served and some space to stand at the bar to drink and people watch. Fresh pastries and novel "breakfast pizzas" can also be had in.

But the real pull is the organic produce that's been carefully chosen from Italy. Andrea's meats, dried pastas, oils and canned goods include, for instance, fruits, sweets and truffles from makers that have otherwise not yet made it to these shores.

Otherwise, the opening will suit home cookers and hoarders of fine Italian produce in London. Organic like the restaurant, the bakery - headed by ex Princi head baker Massimiliano Porta - will serve five pioneering new loaves made with stoneground wholemeal bread, in slow-fermented dough. Meats from Fucina's wood fire pit will be served in sandwiches at lunchtime to-go.
