The famed charcuterie producers are opening their first restaurant in Camberwell

Cannon & Cannon made their name selling best-in-class dry cured British meat at Borough Market. Some of it simple, some undeniably complex, to pair with either beer or wine.

Having experimented with a pop-up for a number of weeks in December, Cannon & Cannon are now ready to open their first London restaurant, a paired-back joint in south London art hub Camberwell. 'Nape' means the back of an animal's neck in Italian. It's also the British name for an Italian cut of dry salami, also originating from the back of the neck.

Nape will seat 45 on the ground floor across a selection of booths and counter stools, and there'll be ample standing room as generally picking at these meat platters will be casual and informal.

Make a meal of it though and Bread Ahead are supplying the doughnuts for afterwards.

Firstly, you might eat the plain House Nape, their cured meat speciality, or try a range of tailor made future classics like cured, air-dried West Country beef with hazelnuts, rapeseed oil and terragon, or Port and juniper cured, air-dried and smoked mutton with pickled walnuts, or British 'nduja and London honey on toast.

A range of toasties will incorporate the meats, as will (in a wholly different way) natural wines from Les Cave de Pyrene and Indigo Wine. And independent London breweries will supply a rotating cast of bottled beers.

There's also a downstairs tasting room that's privately bookable and fit for 15.
