First came The Dairy. Then The Manor. Then, when Paradise Garage opened up last year, we knew the culinary team were doing something right.

Now Counter Culture, The Dairy's latest off-shoot, is opening up next door to the flagship site in Clapham – serving up pintxos-style cuisine and dubbing itself "The Dairy's evil little brother".

Pintxos is a traditional Basque style of tapas, made famous in European culinary capital San Sebastián and currently hot in London's foodie scene (Adam Rawson's Basque Supperclub was one of our favourite hidden gems). With only 15 seats, many around a central kitchen island, it looks pretty cosy – there's plenty of standing space too, in typical Basque country style.

The Dairy put their own spin on Basque food with lots of pickling, fermenting and curing techniques. Some small snacking plates to look forward to are hot smoked lamb ribs with miso aubergine and spiced fennel ferment and an enticing sounding St Martin Bay mackerel, sweet celery, sour rhubarb and house yoghurt.

With a regularly changing menu and fresh, sustainably sourced ingredients, Counter Culture sounds like it will live up to The Dairy's impeccable reputation. The only problem will be managing to get a seat.
