The three-course weekend roast and afternoon tea are offered side-by-side – and both defy convention. There's Buccleuch Estate beef tartare with egg yolk jam – definitely a first – and slow cooked Herdwick lamb shoulder, as well as a vegetarian option. The ultra sweet-toothed could move straight into tea: cucumber sandwiches with whipped goat's curd or Earl Grey and orange choux buns with orange confit.
