This is precisely what young chefs Aaron Webster (Dinner by Heston Blumenthal, Penny Hill Park) and Remi Williams (Deuxave Restaurant, Craigie on Main, Boston USA) are doing, joining together under the banner of Smoke & Salt to bring adventurous food to their latest pop-up in Islington.

Choose from two nights, 13 or 14 of March, for the 'Best of the Butcher’s Block', a menu featuring a brave first course of beef broth with tongue, heart and spring greens and an exciting combination of cod cheek and chorizo salad for the main, with rapini, lemon and apple. Among the table snacks you’ll find bone marrow brioche and artichoke heart barigoule. Dessert is a delicious combination of rubarb, buttermilk, wild honey and fennel.
Don’t be put off by Smoke & Salt’s transience. These chefs have years of fine dining experience and have trained with award-winning cooks, as well as being inspired by the most simple and classic techniques of food preservation: smoking and curing. We’re sure that it won’t be long until they own a restaurant of their own.
