Their Michelin star-studded host, Mr. Ramsay, needs little introduction, but the Busan team are still a cherished secret of the city’s street food gourmands. Blending East with West, the duo mix striking flavours from Korean cuisine with staples from the American diner.
We’re especially excited for their bulgogi beef slider: a 28-day aged British beef patty served with traditional bulgogi sauce, a delicious marinade straight from the kitchens of Korea. Similarly mouthwatering are ribs served in gochujang sauce, a classic Korean condiment made from a thick red pepper paste. Be sure not to leave before sampling their kimchi too. Perhaps the country’s best-known dish, kimchi is made out of fermented vegetables, and served as a side to most savoury dishes. Each Korean home has its own recipe, and learning to make it has long been a rite of passage.
