A sizeable, flexible and stylishly sparse three-floor venue, the Carousel restaurant, Marylebone is the latest venture from the award-winning Shuttlecock Inc., the team of four cousins dedicated to unforgettable parties, pop-ups and dining experiences. When they're not hosting parties and exhibitions, the Carousel kitchen plays constant host to a stream of the country's most exciting up-and-coming chefs, as well as visiting talent from around the world.
Next on the Carousel it's Icelandic chef Gísli Matthías Auðunsson. The young chef runs two restaurants in Iceland – both of which place an emphasis on humour and creativity, offering twists on traditional Icelandic dishes. His menu sounds particularly enticing, with Double Smoked Lamb Chips served with Buttermilk and Nutmeg followed by Langoustine with Dulse, Dill and Dried Fish.
We're particularly excited to try his Cod's Head – Braised in Chicken Stock and served with a Honey and Lovage Potato Salad, it sounds like one for the record books.
There's more than the above on offer with Auðunsson's menu so get down to Carousel from 29 March, and get tasting.
Top tips
Carousel pop up's rotating service means you can expect to wait a little while between courses, but they are constantly improving and the dishes are certainly worth the wait. We'd recommend booking with a group, as Carousel's relaxed atmosphere and long tables are conducive to intimate dining among friends.
Lunch sittings are offered as one- or two-course, but dinner is always four-course. Expect to be there for at least two hours as service is staggered. Our tip: show up at 8 instead of 7 to avoid a wait.
