Two years ago, owners Marino and Ruggiero met in their local pub and quickly realised that the combination of their backgrounds in food production and bar work could spark something special. While their original plan of a southern Italian tavern proved too costly, the pair settled for a market stall instead. After a year and a half of flogging their melt-in-the-mouth meat at Camden Lock market, the duo was rewarded with a residency at metal-music pub, Our Black Heart.
By using a mixture of apple, cherry, alder, hickory and mesquite wood, the end result is succulent meat that flakes off the bone, with all its natural flavours of the meat enhanced. Expect pork ribs, pulled pork and beef brisket sandwich rolls, slow-cooked to perfection and smothered with homemade sauces. Sides include hand-cut fries, smoked mixed beans, and pork crackling. Bring wet wipes; it’s going to get messy.
