They're referring to the iconic, 40th-floor Duck & Waffle flagship, high above the City in the Heron Tower. Open 24 hours, the restaurant serves a signature dish of duck and waffle, alongside other creative spins on British classics that deploy the best ingredients.
More than just good food, Duck & Waffle is one of the capital's most exclusive late-night dining spots, where big-spending Londoners go to celebrate over amazing views of the capital.
The new ground-floor follow-up restaurant will be more accessibly priced, rubbing shoulders with other St James's Market restaurants such as Veneta, Aquavit and Anzu. It's fast-casual, so rather than the militant reservation times at the Heron Tower you'll order your food at a counter, and take-away is an option.
Doherty, from the Heron flagship, is curating the new menu – which is still centred on duck. Dishes include the eponymous Duck & Waffle, a duck jam doughnut, the duck burger with crispy duck leg and, for desserts, the return of Elvis: 'Full Elvis' has peanut butter, jelly, buttered waffle, vanilla cream, peanut brittle, berries and caramelised banana.
